Pota­toes is one of my favorite veg­eta­bles and imag­ine my dis­may when I learned eat­ing pota­toes is harder on my blood sugar level than is sugar. I hate being dia­betic but have learned how to rea­son­ably work pota­toes into my diet. Here are three old fash­ion recipes fea­tur­ing pota­toes that are sure to please the “tators” per­son in your house. Coun­try Fried Pota­toes, Old Fash­ion Hashed Brown Pota­toes, and Creamed Peas and Pota­toes are all great recipes.

AUNT AUDREY’S CREAMED POTATOES AND PEAS
This recipe is from my child­hood. My late Aunt Audrey used to make this deli­cious dish. For you dia­bet­ics out there, the milk and cheese in this recipe makes it okay for us.

6 medium pota­toes, peeled and diced
3 cups frozen peas

White Sauce:
1 tbsp mar­garine
1 tbsp flour
1/4 tsp salt
1/8 tsp pep­per
1 cup milk
Velveeta cheese

Cook the pota­toes in slow-boiling salted water for 20 min­utes. Boil peas for 3 to 5 min­utes until ten­der. Drain the pota­toes and the peas. But­ter the bot­tom and sides of a bak­ing dish. Layer the pota­toes and peas in the dish–potatoes, peas, pota­toes, peas.

Make the white sauce: Melt mar­garine in a small saucepan; add flour, salt and pep­per and blend to smooth while heat­ing over low heat. Stir in the milk, stir­ring until smooth, about 1 minute. Add a chunk of Velveeta cheese, amount to suit your taste, and stir over the low heat until cheese is melted and mix­ture is smooth. Pour the mix­ture over the peas and pota­toes in the but­tered dish.

Coun­try Fried Pota­toes
An old fam­ily recipe.

1/4 cup fat (bacon drip­ping prefer­ably)
2 quarts peeled and sliced pota­toes
1 small to medium onion, chopped
1/2 cup chopped green bell pep­per
1/2 tsp gar­lic pow­der
Salt to taste
Pep­per to taste

Heat fat in a large cast-iron skil­let. When hot, add the veg­eta­bles and sea­son­ings. Stir well to mix in the sea­son­ings. Reduce heat to medium and cook until the veg­eta­bles are ten­der and browned accord­ing to your desires. Stir occa­sion­ally for even browning.

OLD FASHION HASHED BROWN POTATOES
1 1/2 lbs (about 4 medium) bak­ing pota­toes, peeled and shred­ded
2 tbsp grated onion
3/4 tsp salt
1/8 tsp pep­per
3 tbsp but­ter fla­vor shortening

Rinse and drain pota­toes thor­oughly. In a medium mix­ing bowl, com­bine pota­toes, onion, salt and pep­per. Mix well. In a large skil­let, melt the short­en­ing. Add potato mix­ture to the pan and spread out evenly. Cook over medium-high heat for 13 to 15 min­utes or until golden brown and ten­der. Using a spat­ula, turn pota­toes after about 6 to 8 minutes.

Yield: 4 to 6 servings
